Chocolate- Chip Pumpkin Spice Bars

If you're on the hunt for a fall dessert to feed a small crowd, this is it: Chocolate- Chip Pumpkin Spice Bars.

Use a fork to consume. You can see that they're really rather more like a cakey-bar than a hold-in-your-hand-and-firmly-grasp-it bar. But you can also tell from the pic that these are incredibly moist (happily so).

Cream cheese frosting tops these bars along with those darling little mini chocolate chips. The choc chips are also spotted throughout the cake with the chocolate flavor in the cake being subtle.

The teachers at my son's school were the recipients of this fall treat. Despite the fact that the treat came equipped with a little sign announcing its name, the teachers thanked me for the delicious carrot cake. I suppose it was reminiscent of carrot cake in its appearance with the cream cheese frosting and similar spice additions, but I was able to detect the pumpkin flavor without difficulty! We kept a few pieces and it was an easily devoured dessert in my house. Delicious.

This recipe can be found HERE.

  2. Ooh, that swirly pic is calling to me. They DO look incredibly moist! Pumpkin bars are not really popular here (as are all pumpkin desserts), but "carrot cake" gives me a pretty good idea of what it would taste like. Me likey :)

  13. These sound and look great. I never thought of using pumpkin in a cake and why not as I do make the carrot cake. What do you mean with pumpkin puree. Do you boil it and mash it?

    ReplyDelete
  14. Hi Ivy-
Yes you could boil and mash or process pumpkin to get puree. Or you can purchase canned pumpkin puree if it is available in your part of the world. That's what I use!

Does anyone know how to make this low cal or such? I'm a relatively new baker and don't know what to switch out! Any suggestions would be great! :)

  22. Ashley,
Sometimes subbing 1/2 applesauce for the oil works in cake-type recipes. So in the case of this recipe, you could use 1/2 cup canola oil and 1/2 cup unsweetened applesauce. It's likely to turn out just as moist and yummy.

  32. Those do look very moist and oh, so good. For fall desserts I rather pumpkin and sweet potato over the ones that are apple.

That's kinda funny that the teachers couldn't tell they were pumpkin. Makes ya wonder!
