Spiced Apple Buttermilk Waffles

I'm guilty... of occasionally buying frozen waffles at Costco. It's never my idea. I sometimes cave to incessant begging from my little one. But I find that the giant box of waffles tends to last forever, takes up my precious freezer space, and they really aren't even all that good. In fact, they rather stink.

Everyone deserves to eat something special for a Sunday Morning Breakfast. I have rather fond memories of homemade pancakes, waffles and Winchell's Donuts that my mother bestowed upon me as a child. Of course I take those fond memories and I'm passing those along to my own family (at least on Sundays).

Here's a fall weekend breakfast for your Sunday morning... Spiced Apple Waffles.


Tender chunks of apple crowd the insides of these buttery waffles, along with a good dose of pumpkin pie spice.

See all of those apples inside there? They bake up inside your waffle iron just like apple pie. Apple pie waffles work for me.

My family gobbled these up like it was the last breakfast I'd ever make. Maybe it was an extreme longing for something homemade over those cardboard-tasting frozen things. I managed to sneak a bit of the batter aside and make a few extra waffles to throw in the freezer. They do freeze nicely, and they warm up in the toaster just like those Eggo-type waffles (but much better, of course).

I vow to never buy frozen waffles again! Ok, well maybe never, but it's really just as easy to make up a bunch of these guys and freeze them than it is to get in the car, drive to Costco and store that gargantuan box in the freezer. At least I haven't been lured to buy frozen pancakes.

    Nope, they did not stick at all. They baked up perfectly. The whole wheat pastry flour worked great, and I loved that it added a healthy twist!

  8. These look so good. I am guilty of buying Trader Joe's whole wheat waffles. My son could eat those every morning. I could eat these everyday!

  9. I like the fact that they heat up well in the toaster. My mornings are stressed enough without having to think about making waffles. These look divine!

  11. Oh come on, but those store brand waffles have cool things like Hot Wheels painted on them! (Reason my boys!) Or they're cool, they look like little pieces of toast, etc. blah, blah, blah.
    I LOVE homemade waffles. My husband even bought me one of those industrial/hotel type waffle makers a few years ago. Love it!
    These apple ones look SO good.

    About my latest blog. The brownies would be a great holiday treat. They would be cute with colored holiday matching sprinkles on top, too.
    Haven't tasted Nutella? It's good, but not good for you, so I try to steer clear of it. Still, I keep some around because my four year old won't even eat peanut butter, but will eat Nutella, and I figure whatever protein I can get in to him is good!
    I'll have to check out your other Snickerdoodle goodies. My husband will probably like them.

  22. When I go to a diner, I want waffles. Homemade ones are just so special. I mean look at those Eggo ones, they are like oversized pizzelles or something.

  23. Forget Costco's waffles, your house is the place to go for tasty waffles. My kids would love these. I am partial to any baked good loaded with pieces of fresh apples. Gorgeous pictures!

  33. mysweetestday- I have to say that I've never adapted waffle batter to make pancakes so I'm afraid I can't give you advice there! I know that the boxed mixes out there give you an option of pancakes or waffles but I'm not sure how they differ. Wish I could help :(
