Ina Garten's Orzo with Roasted Vegetables

I tested my luck with another Ina Garten recipe: Orzo with Roasted Vegetables. This was a nice side to our Rack of Lamb.


Oh yeah. This was a good one all right.


Slow roasted eggplant, peppers and onions turned into tender, caramelized morsels. I could have eaten this right off that pan.


The veggies were added to cooked orzo and tossed with a lemony dressing. Add scallions, toasted pine nuts, fresh basil and CHUNKS of feta (not crumbled) and you've got yourself a side salad. It was served at room temperature, but it was just as good chilled the following day.

YUM. Even the boy ate it. Ina scores again!

  3. I love that photo of the roast vegetables! I adore them full stop, but involving rice and feta cheese takes this right to the top of the to-make list ^__^. I think I'd like this cold best, I get cravings for cold rice sometimes...

  4. I totally agree with you, this salad is a winner. I made it at least five times last summer when we had different people out to the lake and everyone raved!

    Did you ever make her Chinese Chicken Salad, or the Pesto with Peas? Those are excellent too.

  8. I just had some pasta with roasted vegetables...eggplant, squash, peppers, etc. It was delicious! And this looks even better!

  28. Oh! Another winner. I have a great rice salad with lime and cilantro... I bet it would be even better with Orzo. You need to have your own cookbook!
