Ina Garten's Orzo with Roasted Vegetables

I tested my luck with another Ina Garten recipe: Orzo with Roasted Vegetables. This was a nice side to our Rack of Lamb.


Oh yeah. This was a good one all right.


Slow roasted eggplant, peppers and onions turned into tender, caramelized morsels. I could have eaten this right off that pan.


The veggies were added to cooked orzo and tossed with a lemony dressing. Add scallions, toasted pine nuts, fresh basil and CHUNKS of feta (not crumbled) and you've got yourself a side salad. It was served at room temperature, but it was just as good chilled the following day.

YUM. Even the boy ate it. Ina scores again!

I never can decide if I like Ina or not. I really should just dive in and make some of her recipes. This orzo looks delicious!

I love that photo of the roast vegetables! I adore them full stop, but involving rice and feta cheese takes this right to the top of the to-make list ^__^. I think I'd like this cold best, I get cravings for cold rice sometimes...

I totally agree with you, this salad is a winner. I made it at least five times last summer when we had different people out to the lake and everyone raved!

Did you ever make her Chinese Chicken Salad, or the Pesto with Peas? Those are excellent too.

This is one of my all-time FAVORITE Ina dishes! I could eat it by the bowlful in the summer. Gorgeous photos!

I just had some pasta with roasted vegetables...eggplant, squash, peppers, etc. It was delicious! And this looks even better!

I loooove this dish! I usually leave out the feta, though. Not a fan. Your photos look great! So crisp and vibrant.

LOL, how funny...great minds must think alike. I made this Monday night and put feta in mine and I broke up grilled salmon and added it also.

Lookin good! I bought a bag of orzo and had yet to find anything that was inspiring me. This has cured my lack of inspiration! Looks great...plus, you can't go wrong with Ina Garten.

Oh! Another winner. I have a great rice salad with lime and cilantro... I bet it would be even better with Orzo. You need to have your own cookbook!

I just made this and it was great! I don't love feta, but I used fresh mozzarella instead, and I thought it turned out so good. Thanks for turning me on to this recipe!
